I can honesty state that I never thought I would see a thread here entitled: "I'm Craving Head Cheese". LOL
I have never eaten it - my wife will not allow it in our home. She hates the look of it. I would try perhaps otherwise.

They usually call it "hog head cheese" here in Mississippi. It's very popular.

PS: Pork contains something (I can't recall the terminology) that can cause a rise in blood pressure.

Dagney, if it says souse or hog's head cheese, it's one and the same.
No actual cheese is involved in the product.
