tijkmo-you would starve at our home.

talesin...no prob. taste kind of like a potato with a bit of sweet.

You really need to try a yucca root. Spanish markets have it. It is a very heavy potato that you peal the thick skin, and boil, but it has a very tough if not hard root that runs down the middle of it that you will want to avoid when serving. Butter and salt work well on it. A ladie from Africa taught me how to cook it. I always go to Fiesta mart, pick up something crazy, look for someone who looks as if they are buying it because they actually will know what to do with it, and ask them. My kids try to hide they get so embarassed, but they sure do eat it. It is a fun thing to do!

I love eating vegetables. The tough part is getting them back in their wheelchairs.

My favourites are spinach, mushrooms, and garlic though the latter can be thought of as anti social due to the strong smell it's also one of the best for our health. In fact I love all veggies.

I like them all, and I especially enjoy roasted veggies. Steaming is good, mushy overcooked veggies are a high crime.

Blasted Broccoli is great. I leave it to you, dear reader to invent variations on this theme:

    Blasted Broccoli

    INGREDIENTS:
1 (8 ounce) package broccoli florets
    5 tablespoons olive oil
    1/2 teaspoon salt
    -------------------------------------

    DIRECTIONS:

Preheat oven to 500 degrees F (260 degrees C). Place a baking sheet in the oven until hot.

Place broccoli florets in a large bowl. Stir in olive oil and salt. Using oven mitts, remove the hot baking sheet from the oven. Pour broccoli florets onto baking sheet and spread out.

Bake in preheated oven about 5 minutes; turn and cook about 5 minutes more. (the florets should be somewhat browned and crunchy.) Remove from oven, and set aside.

Spinach, slightly blanched in butter, mixed with garlic and mushrooms. Sometimes I have a sliced boiled egg to go along wuth it instead. Corn on the Cob, boiled briskly about 7 minutes. Creamed Carrots, not the boxed kind, but made from scratch.

I've just had the wonderful experience with kale, a very hearty green that requires a little more work than the usual. Requires extensive cleaning, and can take upwards of 40 minutes to cook because of its heartiness.

Yellow squash mixed with onions, sliced. Cooked slowly in just a touch of butter. Fresh Brussel Sprouts.

All manner of leafy greens for salads, red cabbage, tomato, scallions, chopped onions mixed with fresh mushroom, the toe jam that's of the earth, with baby peeled carrots, garlic that's been in the food processor, bell peppers, even to add some raw spinach in the mix. Add some boiled egg slices, shredded cheese, croutons, with some green olives, stuffed manzilla olives.
