I'm curious and not too knowledgeable about wine. What is 'fortified wine'? And where does the Bible say anything about what or how the Israelites made wine?
If I understand correctly, wine was not specifically mentioned as part of the Passover. (Although I do understand it was not abnormal to have it at the dinner table.)

It is simply regular wine that has been "kicked up a notch".
You can make it yourself, just add a shot or two of brandy or cognac into a glass of wine and you got it. Brandy and cognac are made from wine that has been distilled. So it is just a mixture of regular and distilled wine.
