    Chocolate Apple Sauce Cake

    This recipe is fluffier than a regular brownie, but just as rich. If you like dark chocolate, you will enjoy this low-sugar adaptation. The cake sinks in the middle, so it might be improved by the addition of one egg.

    1 2/3 cups flour

    1/2 cup sugar

    1/2 cup cocoa

    1 tsp baking soda

    1/2 tsp salt

    3/4 cups buttermilk or sour milk (water with 1 tbsp vinegar)

    3 Tbsp. vegetable oil

    2 teaspoons vanilla

    1 personal-size container applesauce

    Preheat over to 350 F. Butter and lightly flour two 8 inch cake pans or one 9 x 13 inch pan. Mix the flour, sugar, cocoa, baking soda, and salt in a bowl. Add the buttermilk or sour milk, vegetable oil, vanilla, and apple sauce, beating until smooth. Spread in the pans or pan and bake, about 20-25 minutes for the small pans, 35-45 minutes for the large one.

    Oooey Gooey variation: After baking, sprinkle 1 cup mini marshmallows on top. Put back in 350 degree oven for about five minutes, or marshmallows are puffed and starting to brown. Take out of the oven and quickly swirl the marshmallow goo around.

    Freezer Cake variation: Spread cooled cake with softened vanilla ice cream. Store in freezer.
