    mmmmMMMmmmm Banana Bread!

    Helen's Banana Bread

    Makes 2 loaves

    Preheat oven to 335-350 (lower for glass pans, higher for metal)
    Bake for 45 to 60 minutes until toothpick inserted comes out clean
    Prepare 2 loaf pans by greasing and flouring

    In 1 qt bowl
    smash 4 large very ripe bananas, or 5 smaller bananas
    (cut out bad spots or too overripe areas)
    don't over smash, you want some banana chunks
    1 Tbsp lemonjuice
    Add 1 cup chopped nuts (optional)
    Pecans, Walnuts, Macadamias, Coconut

    Mix in large 2 or 3 qt bowl:1 cube (1/4 pound) butter, slightly melted
    1-1/2 cups sugar
    Beat until fluffy
    Add
    2 eggs
    1 tsp vanilla
    Beat until really fluffy

    Whisk in 2 qt bowl:
    2 cups flour
    1 tsp baking soda
    1/4 tsp baking powder
    dash of salt

    Mix dry ingredients to sugar-butter mixture until well incorporated
    Add bananas and mix well, but keep some chunks of banana

    Pour into two prepared loaf pans

    Bake 45-60 minutes until toothpick inserted comes out clean.

    Remove from pans and allow to cool on towel covered wire racks

    Will store in freezer for up to 1 month double wrapped in plastic wrap.

    I'm drooling at the very thought of it mmm. My aunty used to make this bread when I was a kid, but I haven't had it in eons now. I bought a stack of almost overripe bananas yesterday on special, now I know what I'm gonna do with em. Thanks for the tip! Enjoy your bread frog
