We enjoyed the fountains in front of the Bellagio. The music and water combined were awesome. I understand there is a show every hour.

I liked Circus Circus, and went to see Ray Charles (what a show)
and the food .... free booze .... it's nice for a few days .... not a gambler meself, though, just put 0.45 in the nickel slots and won a couple cups of nickels, played an hour or so for fun.

When we were last there my husband gambled while I went through the Star Trek Experience, bought lots of Trekkie souveniers, talked to a Klingon, and had a wonderfully geeky time.
There is also the Elvis Museum, a Liberace museum, and the Ethel M chocolate factory. I might do those the next time, but with the Borg coming to the Star Trek Experience I may have to put all of those other things on hold and get assimilated!
