Just wanted to cast a vote for Neil's Famous Shrimp posted above. It's freak'n fantastic and I've made it at least five times. Definitely one of my favs.
Here's my variation. Make the shrimp as posted above. Take the shrimp off the skewers. Grill flour tortillas on your grill sprinkled liberally with monterrey jack cheese. When the cheese is hot and melted, remove from grill and slap in three of those luscious shrimp in your hot cheesy tortilla. Consume with a cold beer. Damn, I'm hungry now. I recommend not inviting a lot of company when you make this. You won't want to share.
