As promised, here's the recipe for my favorite Santa Maria Tri-tip rub. Enjoy!
Santa Maria Tri-tip Rub:
- 2 teaspoons freshly ground black pepper
- 2 teaspoons white pepper
- 2 teaspoons cayenne pepper
- 1 teaspoon garlic powder (or garlic salt, but then use less salt) or: 4 tablespoons granulated garlic
- 6 tablespoons salt
Mix dry ingredients together in a bowl. Rub generously into the tri-tip. Imagine you're giving it a nice massage!
Basting sauce (optional):
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- Optional: Crushed garlic
Whisk together vinegar and oil in a small bowl, brush on meat while cooking. Watch for flames! I keep a squirt gun nearby at all times when grilling.
If I have to tell you how to barbeque the tri-tip then you probably have no business messing with this! ... lol.
