Tri-tip and Horse-manure

    As promised, here's the recipe for my favorite Santa Maria Tri-tip rub. Enjoy!

    Santa Maria Tri-tip Rub:

    • 2 teaspoons freshly ground black pepper
    • 2 teaspoons white pepper
    • 2 teaspoons cayenne pepper
    • 1 teaspoon garlic powder (or garlic salt, but then use less salt) or: 4 tablespoons granulated garlic
    • 6 tablespoons salt

    Mix dry ingredients together in a bowl. Rub generously into the tri-tip. Imagine you're giving it a nice massage!

    Basting sauce (optional):

    • 1/2 cup red wine vinegar
    • 1/4 cup olive oil
    • Optional: Crushed garlic

    Whisk together vinegar and oil in a small bowl, brush on meat while cooking. Watch for flames! I keep a squirt gun nearby at all times when grilling.

    If I have to tell you how to barbeque the tri-tip then you probably have no business messing with this! ... lol.

    It's a big piece of meat and typically takes 25 - 40 minutes to cook depending on size, moisture and fat content.
