That is because they have no clue about the teachings of Christ OR even the teachings of the OT Prophets.
They only know they teachinsg of Man via the WT and GB.
God makes it clear that he desires " mercy/compassion and NOT sacrifice", this is echoed by Christ.
Christ makes it clear then even the Commandment of the Sabbath CAN and SHOULD be "overruled" when life is at stake.
The issue of blood is NOT a commandment, but a dietary restritiction and a sarcificial rite.
