Carnitas!!!
My neighbor just swapped me some Carnitas for eggs and veggies.....
Yummy! I am going to top them with onions, cilantro and a little lime juice!

Carnitas with cilantro onion and tomoteo sauce with a side of Spanish rice..Yumm. Just made some the other day.
Carnitas are really easy to make. Just buy a pork shoulder or butt and season with salt, pepper, garlic powder and red chili powder put in a roasting pan at 325 for 3 to 4 hours depending on how big. You'll know when it's done when it shreds easily. Warm corn tortillas and add the fixings
