Something perfectly wonderful, that I discovered as an appetizer several years ago:
Single leaves of young endive, with a "kiss" sized piping of fresh, soft, Montrachet cheese on the top of each.

well I actually prefer a mix of iceberg with cabbage. Works great with mexican food
