Not that I don't like beef ribs, it's just that they're so danged big that working with them is harder.

Never thought about beef ribs being that much bigger.....but I digress.....

I prefer to handle little meat. It's so much easier to stretch over the rotiserie rack, and it doesn't burn as easily. Also, it's quicker to thaw out and is usually less stiff.

Recipe for make neighborhood of strangers neighborhood of friends:
1. Make a big hole in ground.
2. Make much wood smoulder at the bottom
3. Gather banana leaves and make cover.
4. Lower prepared pig.
5. Add more banana leaves on top.
6. Throw dirt on top.
7. Have a drink and sleep for a few hours.
8. Uncover hole, extract pig. Party. Make sure rice and beans are ready and drinks are chilled. Invite friends. Invite non-friends. Holler at neighbors down the street. Pig party makes many new friends.

a) Play Salsa and Merinque music loud to annoy redneck neighbors that don't come over. Eventually they come. Once they drink, the will dance to anything. Mix in a little Skynard and Allman so everyone is happy. Make sure the Haitians down the street bring some CDs of compas. Pig party makes many new friends.
