Sorry babygirl, Doe is quite right. Honey and sugar are essentially the same thing. They are glucose, and hit the system in the same way. There are some small amount of nutrients in honey, but if you are a diabetic, honey is the same as sugar.

I put garlic on just about everything (except cookies). And I put lemon on everything else.

I have three words for you: garlic, garlic and ......garlic. Not only is it good for you - but you can't get too much of it. Ever. Combine with olive oil, fresh chopped herbs, a little lemon or wine and you're good to go.
But.....are you sure you must be totally salt and sugar free? The other ingredients you leave out are fruit juices and balsamic (sugar content). Anyway, very little of the marinade will be present in the end product - if it is a dietary consideration, there is less sugar and salt present if you pat dry the chicken before you grill - leaving just the flavor essences. Given that - garlic, oil, herbs, wine, citrus - give the primary flavors you want. Then it is up to the individual how much salt - in the form of soy sauce, etc., they want to allow themselves.
BTW: My tip for grilling chicken breasts, which we had tonight: We went down to LA Ahmanson Theatre to see "Ain't Misbehavin'" this afternoon (wonderful) and I left a whole skinless, boneless, chicken breast defrosting/marinating in a ziploc bag with balsamic, olive oil, garlic, and lime. When we got home, it was defrosted and I pounded it in the bag with a rubber mallet to expand the total surface area - you know how whole chicken breasts can get dry and flavorless in the center? Grilled in my cast iron grill skillet - plenty for two people and all was juicy and flavorful. Served with salad and fried rice with pea pods.
