    Good - a soup thread! The temps here have been in upper 90s, but I made tortilla soup in the blender yesterday for lunch anyway, then headed for the pool.

    My most recent soup discovery however, was FISH SOUP (Soupe De Poissons). We were in France a couple of weeks ago with a gang of friends (biking) and I ordered it every night it was on the menu. It was the starter but by the time I finished scraping the bowl I was full. No wonder - it is served with aoli, toasted baguette rounds and shredded cheese.

    I have a few favourites that I make from scratch: Borscht, split pea soup, and a carrot-ginger soup.

    The carrot ginger soup has a nice bite to it.

    I make a Mexican Soup, very easy!

    Chicken broth, seasoned with Taco seasoning.

    Fresh zucchini, yellow squash, carrots, celery, potatoes, peppers, whatever you like.

    Fresh chicken breast, shredded.

    You can make it thin like soup, or thick and serve it over rice.

    And I like spicey, so I add chili pepper.

    There was this german lady I knew she made the best beet borscht, never did figure out her recipe.

    These all sound yummy (finally free)....so tell us the ingred's.

    Maybe you knew my mom. She was German and made borscht. I'm still trying to duplicate her recipe.

    A super easy concoction for those who happen to love cabbage soup...

    Just bring chicken or vegetable broth to the simmering point.

    Then add any amount of coleslaw mix {usually a mixed bag of shredded cabbage & carrots}

    Simmer only a few minutes, and voilĂ ...instant cabbage soup.

    Tomato Soup Easy and muc better than canned!

    Fry onions in Olive oil with garlic.

    Add a can of tomatos when onions soft

    Reduce then any herbs you like .

    In a liquidiser put in about a pint of milk add the fried onions and tomatoes.

    Liquidise then strain

    Add to 4 pint of boilling water

    Add 12oz tomato puree . Hey presto done !!

    Add ground balck pepper to taste

    Anyone here make Pozole? My kids go nuts over it. I take any kind of meat that I may have, beef, chicken, or pork. Brown it in some olive oil, and then add broth, onions, leek, and garlic. Simmer that until the meat is tender. Then strain. Put the meat back in, along with a can of red enchilada sauce. I use Las Palmas, because there is no tomato in it, it's just chile. Add hominy. At this point I usually put it up until the next day, it's so much better when the flavors have had a chance to meld. To serve, get the soup steaming hot, and ladle it into bowls. At the table have a platter loaded with finely shredded cabbage, chopped green onions, cilantro, jalapenos, sliced radishes and lemon or lime wedges. Set out a small bowl of dried Mexican oregano. You throw it all in to the soup, and the hot broth wilts the veggies. Sprinkle with the oregano, and squeeze some lime over............Mmmmm Yummm. It's also a beautiful presentation.
