Tec, if they didn't have flesh, how/why did they eat the fruit?
Eating the fruit represents taking in... whatever the fruit represents.
The tree of life represents life.
The tree of knowledge of good and evil represents the knowledge of good and evil.
There are no trees.
What there is, is what those trees represent. Eating the fruit of the tree is symbolic. Same as you "will know them by their fruits". People don't produce actual fruit.
This is my understanding anyway. I'm sure that I don't have it all right, but perhaps the gist of the understanding. The garden of eden is a spiritual place, represented by physical things so that people can better "see" or understand.
