Hi, Vitty. Sounds like your evil twin popped in for a visit last night... lol
I had to empty my house of anything that could be fried. I also put together the following soup and freeze it in single serving baggies that I can microwave in a jiffy if I am hungry late at night. Not everyone likes root vegetables, but if you do it's pretty good.
1 Turnip chopped
4 cups Chopped cabbage (about 1/2 head Cabbage)
2 cups Chopped carrots (about three)
1/4 cup Chopped yellow onion
1/2 cup Chopped chicken breast, cooked. (I cook these ahead of time, chop them and store in the freezer in 1 cup baggies. Very handy)
2 cups Water
3 Chicken bullion cubes
1 T. Cornstarch
(salt and pepper to taste)
Chop all ingredients into bite sized pieces, the carrot a little finer than the rest. Put all ingredients except the cornstarch, into pressure cooker and cook for 3 minutes with the rocker slowly swaying. (if you use a traditional soup pot, you'll cook it for about 15-20 minutes depending on how soft you like the veggies. Chop the carrots a little smaller than the other things.) Cool at once. Mix 1/4 cup water and one tablespoon cornstarch together and pour into cooker to thicken liquid. Stir very carefully to avoid breaking up the veggies as they will be soft. Serve Immediately.
Tastes pretty darned good and has very few calories; 390 calories in the whole pot of soup! I have not ever measured exactly how many cups of soup it makes (guessing close to a half gallon), but one pot will last a single individual for some time. Ladle it into zip-lock baggies and freeze. In an emergency, thaw it a bit and then heat it in the microwave, or you can reheat on the stove. Careful when stiring though, or you'll end up with mush...
