Sweet Potato & Pear Soup.... Is Not Yukky

    1 Tbs of butter
    1 small onion, chopped
    1/4 Cup carrots, chopped
    1/4 Cup celery, chopped ( I left out celery)
    3 medium-sized sweet potatoes, peeled and diced
    2 pears, peeled and diced
    1/2 tsp dried thyme
    1 tsp paprika
    5 Cups low sodium chicken broth--or homemade
    1/3 Cup whipping cream
    2 tsp maple syrup--or to taste
    2 tsp lime juice--or to taste
    Salt and freshly ground pepper

    1. In a pot, heat butter on medium heat. Add onion, carrot, celery and saute for 1 minute
    2. Add sweet potatoes, pears and thyme and saute for about 2 minutes
    3. Add paprika and chicken broth. Bring to boil and simmer for 15 minutes or until sweet potato is soft.
    4. Puree in a blender or food processor until smooth.
    5. Return to pot, Add cream, maple syrup and lime juice. Simmer for 5 minutes.
    6. If soup is too thick add a little extra broth. Season with salt and pepper, adding more syrup or lime juice as needed.


    Delicious with a side of cornbread.

    Shutterbug, I think I know who would call it yukky. My guy is a meat-n-potatoes man. I asked him today if he would like to try a curry with fruit in it. Yukky. Rbodar, your recipe sounds great. When I try it, I will not let my honey know what is in it.

    When I mention this recipe to some people, they say "yuk" when they hear sweet potato. I just don't get it. LOL

    Agreed. No need to tell your meat and potatoes man what is in the soup. It's a great little recipe.

    has anyone here tried this FANTASTIC Hungarian cherry soup!

    COLD CHERRY SOUP- MEGGY LEVES TSPN00B

    Amount Measure Ingredient -- Preparation Method

    2 lb Fresh cherries -- pitted*
    1 Water
    1 Lemon slice -- seeded
    2 ts Cornstarch
    2 tb Sugar
    3 tb Sour cream

    *2 lb. canned pitted sour cherries may be substituted.
    Fresh cherries: Place them in a saucepan and add
    approx. 1 1/2 c. cold water or enough to cover
    cherries. Add sugar and lemon.

    Canned Cherries: Put cherries with liquid from can
    into the saucepan. Simmer canned cherries for 5
    minutes or until hot. Simmer fresh cherries for 10
    minutes or until they have softened; simmer either
    with sugar and lemon. Remove from the heat.

    Stir together the cornstarch and sour cream; pour the
    mixture into the hot cherries. Return saucepan to the
    heat and stir until the sour cream is well combined
    and the liquid has thickened. Do not let the soup boil
    after the sour cream has been added. Cool and chill
    the soup. Add additional sugar and lemon juice, if
    desired. Serve chilled.
