And the ironic thing is that they have long had to admit that whatever bible canon there is was actually created pretty much from a multitude of early writings (leaving out "apocrapha") - way back in the 3rd + 4th century.
By Christendom. And, by extension of simple logic - under the direction of God (if such a bible canon is to be deemed the true one). At the same time, though - God came down on the wrong side in the Athanasuis/Arius debate on the divinty of the Christ!!!
So - this may be why they (almost reluctantly in the tone of the wording) "accept" it.

The conjunction "though" used in that way is quite unusual indeed. Not only is it an admission that "not belonging to either Judaism or 'Christendom'" and "accepting the holy scriptures" are normally incompatible (making their stance look like a paradoxical exception) but in that sequence it seems to make the former clause logically first (people accept the Bible because they are Jews or Christians, not the other way round). Lapsus calami(tous)?
