Brenda's Hazelnut Oatmeal Cookies

    A phychologist friend of ours just loves these cookies and makes them regularly. Yes, this is my own recipe. Enjoy!

    Brenda?s Hazelnut Oatmeal Cookies

    1 cube Butter ¾ C Flour

    ½ C Granulated Sugar ½ tsp Salt

    ½ C Brown Sugar ½ tsp Baking Soda

    1 Egg 1 ½ C Oats (quick or regular)

    2 ½ - 3 Tbsp reduced Hazelnut Liquor * 2/3 C Hazelnuts, course chopped and toasted

    Reduce liquor in pan on stovetop by ½ - cool then measure. Store extra reduced /extract in refrigerator.

    Toast chopped hazelnuts in pan on stovetop. Use low to med-low and stir regularly. Watch carefully! The moment you turn your back, they burn.

    Preheat oven to 350 ° Bake time 9 to 11 minutes

    Cream butter and sugars in 1-1/2 to 2 quart bowl. (I soften butter in microwave until it begins to melt)

    Blend in egg and liquor.

    Sift flour, salt, and soda together.

    Fold flour mix into creamed mixture.

    Fold in oats and nuts.

    Spoon onto lightly greased (or non-stick) cookie sheet.

    Bake 10-12 minutes at 350 °

    For cookie bars spread on lightly greased 9x13 cookie sheet and bake 15 ? 20 minutes, until done. Cut while still warm.

    * If using commercial hazelnut extract, try using 1 tsp to start. Taste dough for flavor.
