I know that in the past some have asked about this. I would add that before you dry the matzoh, run a docker over the cracker or prick it all over with a fork. This is supposed to prevent large "blisters" from forming, and the dough enjoys it.

The whole concept of the water being spring water and no metals in it as well as the wheat being ground while you watch, has a vaguely kosher sound to it doesnt it?

It does, doesn't it? Back then I suppose the assumption was that spring water was "good" water... and I think it took about 100 years for the WTB&TS to accept the "germ theory of disease.
The Watchtower "companion magazines" back then tried to be the hard-copy iPad of its day. It did poorly in any role it played.
