I coated mine with meal and sauteed it in a little peanut oil.

I love them! They are not always available though. We have grilled them, baked them and panfried them, yum!

Swai are vietnamese catfish. I love catfish, and Swai are very inexpensive. Good eats!

I buy the fish whole and on Easter we let them thaw and then hide the catfish around the yard an in the house (under a stump, in the chair cushions; that sort of thing). We then invite the Vietnamese kids in the neighborhood over for a Catfish "noodling hunt". It's a great way to get the kids introduced to proper Christian culture (Easter and catfish noodling) using something they are already familiar with (smelly fish). Then we play dominoes and I usually get drunk and angry and topple their suits and make them go home to their commie parents.
