Think about it... theres always some blood left in a cut of meat, you can't wash it all out. What about stock? You boil up the bones for gravy... whats in the bones that gives it the favour? bone marrow!
If JW's really wanted to adhere to their beliefs they would be veggies, but of course this would mean the bethal big wigs having to go with out their steak... so thats not going to happen!
The Bible specifically condones eating certain types of meats, so long as they are bled.
Having relatives who are Seventh Day Adventists and with our mutual ties to Russell who was vegetarian you wonder why it didn't get put into the mix of teachings.

I remember asking as a little kid, why it was okay to eat meat that had blood in it. I was told that wasn't blood, it was meat juice.

Side question: Is there anything in WT print that says jws will be vegetarians in "the new system"?
This is how most JWs would explain it, IMHO.
When Noah got off of the ark, Jehovah told him that he could eat every creeping, crawling, living thing. Then came the Law, but Christ's death did away with the Law, and so now they can eat anything they'd like. In general, they 'bleed' mammals and fowl before eating them. However, just as with John the Baptizer and his locusts, there are quite a few creatures that cannot be bled prior to eating and so they don't bleed those, of course (shrimp, crawfish, oysters, many fish).
In a nutshell, because JF Rutherford wasn't a vegetarian. Neither were Knorr nor Franz.
Beards on men are harmless, yet look what Rutherford did to that. If they had wanted JW's to be vegetarian, they would have come up with some supporting nonsense just as they have done with the blood transfusions. It's a contrarian religion, but only so far as the personal likes and dislikes of the leaders themselves.
