What that short video neglects to mention is that many of the pioneering scientists were able to do their research and make those profound discoveries because of Catholic universities. At least give religion some small credit...

And the reason you cannot trust science is you cannot trust the regulators. The FDA is nothing more than a truth-suppressor, just as the early Catholic church was during the First Dark Ages. Then, it was "The earth is flat, and everything revolves around the earth". Never mind that all the other 5 known planets revolve around the sun, and that only our moon actually revolves around the earth. Try telling that to them dingbats, and you were going for a little trip on a pole with some firewood around you.
Now, it isn't the earth is flat. It is in so many areas. No cures for diseases--just scam treatments that are worse than snake oil (at least, I know of no cases where snake oil actually caused diseases). No energy solution. Speed limits in the area of 55 based on fake "safety studies". Anyone that had a different answer is liable to be silenced, put in prison, or executed--just as they were back during the First Dark Ages. Try putting a cure for cancer on the market, even one that you would trust yourself with your life, and you are going for a ride in the paddy wagon. Try putting nuclear fusion on the market, and they will get the likes of Clam Shell Alliance to shut you down. Try boosting the speed limits to 80 or 90, and they will have horror stories about all the accidents without proof that such accidents would actually happen. And so on.
We need to set science free. If the hypothesis is that the earth is flat, test it--and if you can demonstrate it isn't, publish it. If alpha lipoic acid cures cancer (or some derivative of it), put it in mainstream journals and stop squashing the facts. And so on--or may each and every regulator that pressures science to suppress new information live and die in the 1950s.
