You must eat at least 5 portions of fruit or vegetables everyday to keep healthy, wealthy and wise.
Forget all about the old English cooking methods of boiling everything to a pulp, thats about as outdated as rotting teeth and rickets.
This is how I cook vegetables. I always serve at least 5 varieties from aubergines, mushrooms, red onions, courgettes, cauliflower, brocolli, new potato's, sprouts, carrots, green (bell) peppers, asparagus and French beans.
Peel as required then chop them into one inch cubes. Pile the lot into a large bowl. Take a cup, and half fill it with olive oil. Put in a spoonful of salt, 2 garlic cloves, big dose of ground black pepper and half a teaspoon of ground up coriander seeds. Whizz it up with a blender and pour all over the veggies and mix together thoroughly.
Spread the coated veg onto a flat baking tray. Heat up the oven to full blast, gas mark 9 or equivalent, and put veggies onto top shelf of the oven for exactly 35 minutes.
You will have delightfully crisp, just charred, incredibly tasty veg that is absolutely sublime.
