What is the best way to cook pork babyback ribs?

They are expensive and I just bought 2 racks. They were on the grill on low for about 2 hours (250 degrees) it started pouring rain so I had to bring them in to finish in the oven.

What is your favorite way to cook them, keeping them tender?

"steam" them over a wok of beer before baking them in foil.

Works for me, if I have the time and the inclination

So they never see flame - put them on the rack and start the smoke chamber. Long and slow - minimum 8 hours with a good dry rub on

smoke them, then grill them. or rotisserie then grilling. or, sear them for a few seconds, then cook on a very low heat. i also boil ribs before cooking them over a low heat, but, have only done this with beef ribs. never tried pork.

    1) I keep a bunch of those little (3 or 4 inches on a side, a couple of inches high) aluminum throw away pans around just for this: put water in one and set in on the grill. It will put enough moisture under the lid to keep the meat from drying out. If you're doing something long and slow it will need to be refilled.

    2) Keep smoking chips on the grill.

    3) Only sissy's let a little rain stop them from grilling, I've been known to grill when its snowing.

We cook them covered in the oven, about 300 degrees to drain off the fat. Grill the last 20-30 minutes with sauce, indirect fire.

I'm with Mulan. I love the concept of doing babyback ribs on the grill but I finally realized the oven works best.

try marinating them in coca cola--this will tenderize them and then brown them in the oven. after that, put in grill over indirect hot coals with moist hickory wood chips on the coals(this will give them a good smoked flavor).

Make a rub out of paprika garlic powder onion powder and salt then cook them like everyone else is saying with indirect heat. If you have to do them inside (wuss) use the broiler. The heat from above lets the fat melt from the top down, works best!
