Dear Gourmets,
Well, big bird's carcass is simmering away, I'm having a turkey sandwich and then off to market for all the luscious add-ins. Do you have a favorite recipe? Of course, it's pretty basic, but I'm sure yours has got to be the best! Wanna share?

Not a soup recipe, but one idea on how to get rid of some of the excess bird....one I thing I like to do with the smaller bits is ground it up in a blender and then put in a pasta sauce. If you've been eating turkey for days and if you're sick of turkey, it's a good way to eat it w/o having it taste like turkey....
How could anyone ever get sick of turkey?

Will try your suggestion, Leolaia. A reason to use my blender, at last.
Soup turned out great! A little extra virgin olive oil in the bowl gives a nice touch as the broth is pretty much far-free. Soup simmering on the range on a cool autumn day---as good as it gets!
